Fried chicken or pork barbeque are not the typical food you can find on the highway in Victoria, Laguna, but native duck or itik that are bred widely in the province. Victoria, Laguna is called "The Duck Capital" as it has a vibrant duck industry in the municipality. In fact, every second week of November, Victoria, Laguna celebrates the Itik Festival, which coincides with the municipality's foundation day.
Kinulob na itik is typically boiled for hours and then deep fried for it to become crispy. Sampaloc and other spices such as onion and garlic are added to enhance the flavor. It is usually sold in a banana leaf with sarsa. The meat is a bit tough but very tasty. It is definitely a unique dish only from Victoria.
The product is usually sold near the highway but there are also stores hidden inside the municipality.
