Just along the highway of Mawab in Compostela Valley are stores offering special bibingka and other Filipino snack delicacies.
One snack which managed to get my attention was Nilamburan nga Suman. It brought back childhood memories of Sundays spent listening to Nat King Cole, Matt Monro, Andy Williams while having hot chocolate or coffee with Suman or Sticky Rice wrapped in banana or coconut leaf.
Nilamburan means “mixed with”. So that means that this suman was mixed with landang or brownish black and sometimes violet rice. Swirls of brown between sticky gelatinous white rice makes you want to try if it tastes better or just the same.
Some add sugar to make it sweet while others like it plain. At PhP35 (US$0.82) per big roll, it is worth every bite. And yes, it is best eaten with hot sikwate (chocolate drink) or coffee while listening to music or chatting with good friends.
