When the crocodile lechon was posted here in Choose Philippines and aired in TV Patrol Weekend, there were a lot of reactions and feedbacks both negative and positive.
For one, people reacted to killing endangered crocodiles. Be assured that the crocodiles at the Davao Crocodile Park are not wild and endangered but are farm-bred. Special permits have to be secured from the Department of Environment and Natural Resources before slaughtering a crocodile.
If the lechon crocodile did not appeal to your palate, maybe the crocodile sausage would.
Crocodile meat is grounded, added with spices and processed in making the sausage. It is grilled and sandwiched with catsup, mayo and mustard just like other sausages and hotdogs or have the sausage on a stick.
Since crocodile meat is low in fat, calories and very high in protein, this might appeal to those who are on a diet.
The crocodile sausage’s taste is a cross between pork and chicken and its texture is just like your regular sausage.
