One of the Filipino’s authentic dishes that is usually being paired during a drinking session, is the Sisig or known as Sizzling Sisig. It is one of the best Pulutan in the Philippines due to its unique taste and presentation. Around bars and restaurants, the many varieties of sisig dish is a best seller either to go along your favorite drink or to be paired down with hot steamed rice. 






 If any of you are not aware what is it made from, Well, It is a Filipino dish that is made from parts of pig’s head and liver, usually seasoned with calamansi juice or lemon juice and chili peppers. The dish is said to have originated in Pampanga, Phlippines.






So if you want to try this at home, this recipe is prepared in three phases: boiling, broiling and finally frying. A pig's head is first boiled in order to remove hairs and to make it tender. But there are only portions of it that are to be chopped and grilled or broiled. Finally, it is fried with onions and served on a sizzling plate. To make it more tasteful and delicious, you can add eggs, ox brains, chicharon (pork cracklings), pork or chicken liver, and even mayonnaise.



 



Ingredients:



2 lbs pig ears



¼ lb pork belly



1 cup onion, minced



3 tbsp soy sauce



1 tsp ground black pepper



1 knob ginger, minced



3 tbsp chili



1 piece lemon (or 3 to 5 pieces calamansi)



½ cup butter (or margarine)



¼ lb chicken liver



34 ounces water



mayonnaise and egg



1 tsp salt



 



Cooking Procedure:



 



Pour the water in a pan and bring to a boil , then add salt and pepper



Put-in the pig’s ears and pork belly then simmer for 40 minutes to 1 hour (or until tender).



Remove the boiled ingredients from the pot then drain excess water



Grill the boiled pig ears and pork belly until done then chop the pig ears and pork belly into fine pieces



In a pan, melt the butter then add the onions. Cook until onions are soft. Put-in the ginger and cook for a few minutes



Add the chicken liver and cook until well done. Crush the chicken liver while being cooked in the pan



Add the chopped pig ears and pork belly then cook for 10 minutes



Put-in the soy sauce and chili then mix well, add salt and pepper to taste, put-in the mayonnaise and mix with the other ingredients



Use Sizzling plate to serve hot, add fresh egg as topping then add the lemon or calamansi before eating.



 



And your Sizzling Sisig is now ready to be served! Have a happy eating and drinking session!
